Ingredients

2kg/4.5lbs ‘smoked pork chop messenger meat’ ham

¼ cup butter, melted

⅓ cup liquid honey

¼ cup dijon mustard

½ tsp kosher salt

1x orange, sliced into wedges with peel on

Fresh thyme for garnish

Instructions

  1. Take the ham roast out of the fridge 1 hour before cooking to warm to room temperature.
  2. Preheat the oven to 350F.
  3. Place the ham in a baking dish with 4 orange wedges.
  4. Make the glaze by whisking together melted butter, honey, mustard and kosher salt.
  5. Brush ¾ of the glaze over the ham and save the rest of the glaze for later.
  6. Bake for 1 hour to 1 hour 30 minutes, basting the ham with the juices in the pan after 45 minutes.
  7. Cook the ham until the thermometer reads between 145F.
  8. Spread the remaining glaze over top and let the glaze sit for a few minutes.
  9. Then loosely tent the ham with foil and rest for 10-15 minutes before slicing.
  10. Serve garnished with extra wedges of orange and fresh thyme sprigs around the serving dish.
