Ingredients

1x pork tenderloin

½ tsp coarse salt

¼ tsp pepper

1 tbsp extra virgin olive oil

1 shallot, minced

2 fuji or gala apples peeled, cored and cut each half into eighths

4 small sweet potatoes, cut into half-inch pieces

½ tbsp extra virgin olive oil

½ tsp coarse salt

¼ tsp pepper

2 sprigs rosemary plus more for garnish

 

Sauce:

¼ cup maple syrup

1 tbsp grainy mustard

Instructions

  1. Pre heat the oven to 400F
  2. Mix the maple syrup with the grainy mustard and set aside.
  3. Season the pork tenderloin with salt and pepper.
  4. In a cast iron or oven safe frying pan, add 1 tbsp olive oil and heat to medium-high heat.
  5. Sear the pork tenderloin on each side for 3-4 minutes to get a golden crust, then remove to a plate and set aside.
  6. Turn the pan to medium heat and add in the shallots and saute for 2 minutes.
  7. Then add in the apples and sweet potatoes to the pan along with olive oil, salt and pepper, cooking for 5 minutes stirring occasionally then stir in 2 sprigs of rosemary.
  8. Remove from the heat and return the pork tenderloin and juices to the cast iron pan. Pour the maple syrup and mustard sauce over the tenderloin.
  9. Put the pan in the oven and cook for 15-20 minutes or until the internal temperature reaches 145F when measured with a thermometer.
  10. Remove pork from the oven and let rest in the pan covered with foil for 5 minutes and then slice into half-inch pieces and serve with potatoes and apples.
  11. Garnish with more rosemary.

TIPS

  • Want to add a second pork tenderloin? Simply double the sauce and follow the same cooking instructions.
  • *Don’t have a cast iron pan? Use an oven safe frying pan or use a frying pan and transfer to a baking dish to put in the oven.
