Ingredients
1x pork tenderloin
½ tsp coarse salt
¼ tsp pepper
1 tbsp extra virgin olive oil
1 shallot, minced
2 fuji or gala apples peeled, cored and cut each half into eighths
4 small sweet potatoes, cut into half-inch pieces
½ tbsp extra virgin olive oil
½ tsp coarse salt
¼ tsp pepper
2 sprigs rosemary plus more for garnish
Sauce:
¼ cup maple syrup
1 tbsp grainy mustard
Instructions
- Pre heat the oven to 400F
- Mix the maple syrup with the grainy mustard and set aside.
- Season the pork tenderloin with salt and pepper.
- In a cast iron or oven safe frying pan, add 1 tbsp olive oil and heat to medium-high heat.
- Sear the pork tenderloin on each side for 3-4 minutes to get a golden crust, then remove to a plate and set aside.
- Turn the pan to medium heat and add in the shallots and saute for 2 minutes.
- Then add in the apples and sweet potatoes to the pan along with olive oil, salt and pepper, cooking for 5 minutes stirring occasionally then stir in 2 sprigs of rosemary.
- Remove from the heat and return the pork tenderloin and juices to the cast iron pan. Pour the maple syrup and mustard sauce over the tenderloin.
- Put the pan in the oven and cook for 15-20 minutes or until the internal temperature reaches 145F when measured with a thermometer.
- Remove pork from the oven and let rest in the pan covered with foil for 5 minutes and then slice into half-inch pieces and serve with potatoes and apples.
- Garnish with more rosemary.
TIPS
- Want to add a second pork tenderloin? Simply double the sauce and follow the same cooking instructions.
- *Don’t have a cast iron pan? Use an oven safe frying pan or use a frying pan and transfer to a baking dish to put in the oven.
