Ingredients

12 thin slices of pancetta (about ¼ inch thick or less)

12 tbsp ricotta

4 figs

1-2 tbsp of honey for drizzling

Sprigs of thyme

Instructions

  1. Pre-heat the oven to 400F.
  2. Line a baking sheet with parchment paper and place pancetta in a single layer on the baking sheet.
  3. Bake on lower oven rack until crisp and browned, about 12-15 minutes.
  4. Gently place pancetta on paper towels for 10-15 minutes until crisp.
  5. Slice figs and cut slices in half.
  6. Transfer the pancetta crisps to a serving tray and top each with 1 tbsp of ricotta, two half fig slices, sprinkle with thyme and drizzle with honey.
  7. Serve immediately!

TIPS

  • Using thinner slices of pancetta? Just use a bit less ricotta per pancetta crisp.
