Ingredients

450g lean ground beef

1x package ground italian sausage (600-650g)

1 small yellow onion, grated

1 tsp salt

½ tsp ground pepper

2 tsp dried oregano

2 tbsp fresh minced parsley

1 1/2 tsp garlic powder

2 eggs

1 cup breadcrumbs

150g provolone cheese, cut into eight 2 inch pieces

½ cup ketchup

Instructions

  1. Preheat the oven to 375F.
  2. In a mixing bowl add ground beef, ground italian sausage, grated onion, salt, ground pepper, dried oregano, minced parsley, garlic powder, eggs and breadcrumbs and use your hands to combine the ingredients. Set aside.
  3. If you have a mini loaf pan, spray the pan with cooking spray of choice. If you don’t have a mini loaf pan, line a baking sheet with parchment paper.
  4. Divide the mixture evenly into 8 portions.
  5. Form each portion into ovals and use your fingers to press a piece of cheese into the mini meatloaf and then close the meat around it. Place the mini meatloaf in the mini loaf pan or onto the prepared baking sheet, depending on what you’re using.
  6. Brush the tops of each meatloaf with ketchup.
  7. Bake until the internal temperature reaches 165F, about 30-40 minutes.
  8. Serve with mashed potatoes and arugula with olive oil and lemon juice.
