Ingredients

10 cups water

4-4 ½ tsp Vegeta food seasoning

1x 250g package pasta all’uovo / sfoglia ruvida (or small pasta of your choice)

Optional: Fresh thyme to garnish and fresh baguette bread & butter

Instructions

  1. Over high heat, heat the water until boiling.
  2. Once boiling, turn the heat down to medium-high and add in the Vegeta food seasoning and simmer for 5 minutes. Taste and adjust seasoning if necessary.
  3. With the broth still simmering, add in the pasta and simmer for 3-4 minutes or until pasta is al dente.
  4. Remove from the heat and ladle into bowls immediately. Finish with fresh thyme and a side of baguette and butter.

TIPS

To add protein to this soup, try whisking one egg into the pot and whisk until cooked. Then add in a handful of parmesan cheese or use the cheese as a topping.
