Ingredients
2 large peaches, sliced in 8 pieces each
300-400g Halloumi, cut into 1 inch cubes
½ large red onion, cut into 1 inch pieces
2 cups cubed Calabrese bread, 1 inch cubes
¼ cup Olive oil
Juice of one lemon
1 tsp dried oregano
1 tbsp honey
Salt and pepper
Vegetable oil for the grill
Arugula for serving
Wooden skewers, soaked in water
Instructions
- Pre-heat the barbeque to medium-high heat, about 375-400F.
- In a large bowl make the marinade by whisking together the olive oil, juice of one lemon, dried oregano, honey and a big pinch of both salt and pepper until combined.
- Add the peach slices, cubed halloumi and onion pieces to the bowl and toss to combine. Then add the bread and gently toss a few more times to coat.
- Divide and skewer the peach slices, halloumi, red onion and bread cubes over 6-8 skewers. Save any of the marinade for basting while grilling.
- Oil the grill and cook the skewers on the barbeque, cooking about 2-3 minutes per side and brush with any leftover marinade when you turn the skewers, about 8-12 minutes total.
- Serve skewers with fresh arugula dressed with a drizzle of olive oil and lemon juice.
TIPS
- If you can’t find peaches, nectarines would also be delicious! If you don’t want to use bread on the skewers, replace with another peach and extra halloumi if desired.
