Bison Burger with Saskatoon Berry Jam

Ingredients

Burgers:

4 panini calabrese small buns

1 pound ground bison

1 tsp fresh thyme (or ½ tsp dried thyme)

1/2 tsp kosher salt

4x slices aged cheddar

1 head Red leaf lettuce

Avocado oil for the grill

 

Saskatoon Berry Jam:

1 small shallot, diced (about a 1/4 cup)

1/4 tsp salt

1/2 tbsp butter

1/2 tbsp honey

1 cup saskatoon berries (can use frozen)

3/4 cup water

1 tsp cornstarch

Instructions

  1. First make the saskatoon berry jam by combining the diced shallot, salt and butter in a small saucepan over medium heat. Sauté the shallot for 5 minutes until soft and starting to brown.
  2. Add in the honey, saskatoon berries and water to the pan and bring to a simmer; simmer on medium-low heat for about 5 minutes. Then add in the cornstarch, stirring well to combine and simmer for another 5 minutes until the mixture becomes thicker like a jam.
  3. Take off the heat and set aside.
  4. Next, heat up your grill to medium-high heat (about 450F). While the grill is heating up, make your bison burger patties by combining the ground bison, thyme and salt, mixing gently with your hands. Form four patties, about a 1/2 inch in size.
  5. Press your thumb into the centre of each patty to make an indent; this helps to keep their shape while grilling.
  6. Bring out the buns and 4 slices of cheese to the grill as well.
  7. Brush a drizzle of avocado oil on one side of the burgers (the side that will go down on the grill first) and grill the burgers for 4 minutes on one side. Then flip the burger, place a slice of cheese on each burger patty and grill for another 3-5 minutes until
  8. cheese is melted and burgers are done (internal temperature reaches 140ºF for medium to 160ºF for well done) *Bison is a very lean meat so careful not to overcook*
  9. Remove the burgers from the grill and set aside on a clean plate to rest while you toast the buns for 1-2 minutes.
  10. Top the toasted buns with dijon, lettuce, bison burger and big dollop of saskatoon berry jam and enjoy! Serve with your choice of sides.

TIPS

  • Bison is a very lean meat so keep a close eye on the grill temperature to make sure they do not overcook.
  • Avocado oil is great to use on the grill because it has a high smoke point and can handle the heat of the barbeque more efficiently; you could also use grapeseed oil.
